Bacon and Cheese Stuffed French Toast

One thing the Midwest is good for – comfort food. This is true for the southern United States, as well. Since Missouri is an interesting mixture of both, I thought that this recipe for Bacon and Cheese Stuffed French Toast simply HAD to be shared.

I’ll be straight up and admit that this recipe is not particularly healthy, but if this is an issue for you, it is super easy to change it up. Choose your favorite healthy bread. Pick a different cheese and change the bacon to turkey or vegetable-based. These sandwiches are completely flexible and would be yummy in any number of ways.

Bacon and Cheese Stuffed French Toast

We knew we wanted a nice melty cheese, so we decided on Velveeta. But we were a little worried that it might overpower the rest of the flavors.

We needn’t have worried. It was absolutely amazing!

First You Cook the Bacon

If you have never baked bacon before, you really have to give it a try! It’s fast, and honestly, it’s a lot easier. Just lay some parchment paper out on a cookie sheet and then lay your raw bacon out on it

Cook Bacon in the Oven

Set your oven to 450 degrees and the timer for 23 minutes and make yourself comfortable. When the timer goes off, you’ll find that you have this wonderful bacon just waiting to be devoured by you!

Just don’t eat it too fast! You’ll want to save enough to make these incredible sandwiches!

Mix Up Your Egg Batter

Once your bacon is cooked, it’s time to get your eggs mixed up. It’s pretty simple. Just crack four eggs into a bowl.

Four Eggs

Add in one half cup of milk.

Four Eggs Half Cup Milk

Add 1/2 teaspoon of Vanilla extract and a few shakes of Cinnamon.

And whisk it. Whisk it good! (do do do do do doooo doooo!)

Build Your Sandwich

Next, get yourself some nice whole grain bread. You might be tempted to use regular bread, but this really works better with denser bread. We used Oroweat 12 Grain bread, but you should use whatever whole grain bread you like.

Add some cheese. We used two slices of Velveeta for ours. (And no, I won’t argue about whether or not Velveeta is actually cheese or not. It melts nicely and tastes good. Nuff said.)

Velveeta Layer

Then we added four slices of bacon. Precious, wonderful bacon. (And no, we won’t discuss how many slices we ate while making our recipe. Mostly because we lost count!)

Bacon Slices

Top the bacon off with another couple of slices of cheese.

Time to Cook

Over medium heat, melt a nice chunk of butter and let it sizzle.

Melted Butter in Pan

Holding one sandwich together, coat it with the egg and milk mixture.

Coating the French Toast

Cook over medium heat and flip over (carefully) when you can see that the cheese is melting.

Isn’t that pretty?

Nothing Left to Do But Eat

Once your sandwiches are cooked, there’s nothing left to do but eat. Cut your sandwich in half so you can get the view of all that amazing melty cheese and the way it gently embraces the crispy bacon.

Take a nice sniff of your Bacon and Cheese Stuffed French Toast. Notice the lovely smell of vanilla? We really enjoyed that!

You know you can’t resist the yumminess!

Bacon and Cheese Stuffed French Toast

We served ours up with a bit more bacon and some sliced strawberries. We also put a little syrup aside to dip our sandwiches in.

Although really, the sandwich was delicious even without the syrup!

Bacon and Cheese Stuffed French Toast ready to eat with sliced strawberries on the side

Like a toasted cheese with bacon inside - but WAY BETTER!

  • 1 12 oz pkg Thin Sliced Bacon (approximately 12 slices)
  • 4 Eggs
  • 1/2 cup Milk
  • 1/2 tsp Vanilla
  • 1/2 tsp Cinnamon (or your preference)
  • 8 slices Oroweat 12 Grain Bread (or your preference)
  • 8 to 16 Slice Cheese of Choice (we used Velveeta from the box that we sliced ourselves)
  • Butter (to fry your sandwiches in)
  • Syrup of Choice (optional)

  1. Cook your bacon on the stove or in the oven. Set aside.
  2. Into a bowl, crack 4 eggs.
  3. Add milk, vanilla, and cinnamon. Whisk until blended.
  4. Set out 4 slices of bread.
  5. Place one to two cheese slices on each slice of bread, enough to cover the surface.
  6. Place 3 slices of bacon on top of the cheese. Fold or cut in order to cover cheese entirely.
  7. Place one to two more slices of cheese on top of the bacon, enough to cover the surface.
  8. Top with a slice of bread.
  9. Melt a chunk of butter in a frying pan.
  10. Take one assembled sandwich and dredge it through the egg mixture, coating both sides. Place in pan in hot butter over medium heat. (You can cook more than one sandwich at a time if you have room in your pan.
  11. Carefully flip the sandwich over when you see the cheese beginning to melt.
  12. Continue to cook over medium heat until both sides are golden brown and toasty.
  13. Serve with syrup on the side for dipping.
  14. Enjoy!
