I’ll be honest – this Bacon and Cheese Stuffed French Toast surprised us. But we got to thinking about comfort food one night and came up with this delicious recipe. No, it’s not the healthiest thing in the world, but it is the ultimate comfort food!

Bacon and Cheese Stuffed French Toast
One thing the Midwest is good for – comfort food. This is true for the southern United States, as well. Since Missouri is an interesting mixture of both, I thought that this recipe for Bacon and Cheese Stuffed French Toast simply HAD to be shared.
I’ll be straight up and admit that this recipe is not particularly healthy, but if this is an issue for you, it is super easy to change it up. Choose your favorite healthy bread. Pick a different cheese and change the bacon to turkey or vegetable-based. These sandwiches are completely flexible and would be yummy in any number of ways.
We knew we wanted a nice melty cheese, so we decided on Velveeta. But we were a little worried that it might overpower the rest of the flavors.
We needn’t have worried. It was absolutely amazing!
First You Cook the Bacon
If you have never baked bacon before, you really have to give it a try! It’s fast, and honestly, it’s a lot easier. Just lay some parchment paper out on a cookie sheet and then lay your raw bacon out on it
Set your oven to 450 degrees and the timer for 23 minutes and make yourself comfortable. When the timer goes off, you’ll find that you have this wonderful bacon just waiting to be devoured by you!
Just don’t eat it too fast! You’ll want to save enough to make these incredible sandwiches!
Mix Up Your Egg Batter
Once your bacon is cooked, it’s time to get your eggs mixed up. It’s pretty simple. Just crack four eggs into a bowl.
Add in one half cup of milk.
Add 1/2 teaspoon of Vanilla extract and a few shakes of Cinnamon.
And whisk it. Whisk it good! (do do do do do doooo doooo!)
Build Your Sandwich
Next, get yourself some nice whole grain bread. You might be tempted to use regular bread, but this really works better with denser bread. We used Oroweat 12 Grain bread, but you should use whatever whole grain bread you like.
Add some cheese. We used two slices of Velveeta for ours. (And no, I won’t argue about whether or not Velveeta is actually cheese or not. It melts nicely and tastes good. Nuff said.)
Then we added four slices of bacon. Precious, wonderful bacon. (And no, we won’t discuss how many slices we ate while making our recipe. Mostly because we lost count!)
Top the bacon off with another couple of slices of cheese.
Time to Cook
Over medium heat, melt a nice chunk of butter and let it sizzle.
Holding one sandwich together, coat it with the egg and milk mixture.
Cook over medium heat and flip over (carefully) when you can see that the cheese is melting.
Isn’t that pretty?
Nothing Left to Do But Eat
Once your sandwiches are cooked, there’s nothing left to do but eat. Cut your sandwich in half so you can get the view of all that amazing melty cheese and the way it gently embraces the crispy bacon.
Take a nice sniff of your Bacon and Cheese Stuffed French Toast. Notice the lovely smell of vanilla? We really enjoyed that!
You know you can’t resist the yumminess!
We served ours up with a bit more bacon and some sliced strawberries. We also put a little syrup aside to dip our sandwiches in.
Although really, the sandwich was delicious even without the syrup!
